Christmas Chili on the Weber Kettle

Recipe:
Ken’s Red Chili

Ingredients:
3 pounds of Ground Beef
1 – 1 1/2 of Stew meat
1 Can of Brooks Chili Mix
1 – 15oz. can of Tomato Sauce
1 can of Rotel Original
Spicy V-8 (top off pot with this. You won’t use it all)
Salt, Pepper & Garlic (SPG)
1 – 2oz. Chili Powder
Red Chili Flake to taste
Cayenne Pepper to taste
Cherry wood chunks for smoking (Optional)

If adding cherry smoke, I suggest smoking only the stew meat. Otherwise, it can get too smokey… Just my opinion. Otherwise… Brown the ground beef along with the stew meat. Drain off the fat.
Add all ingredient except the Spicy V-8. Mix well and top off the pot with the V-8. Let the chili simmer in the pot for about an hour, stirring occasionally. Enjoy!
