Sweet Potato(shakarkandi) curry is something different than the regular dishes we make out of this vegetable. Other than chaat and fries, this can also be made as a curry vegetable. And the curry with smoothness and spice gives a perfect blend to the little sweet flavor of shakarkandi.

Ingredients

Shakarkandi/Sweet potatoes -2 medium size
Tomato -2small
Ginger-1”
Green chili -2
Red chili powder-1tsp
Dahi (completely whisked)-1bowl
Jeera-1tsp
Hing-1pinch
Haldi powder-1tsp
Coriander/Dhania powder -1tsp
Garam masala powder -1tsp
Coriander leaves -1tsp
Water -2cups
Salt -as per taste
Ghee/Refined oil -2tsp

Method –

1-Boil the shakarkandi, cool down, peel it and cut in thick pieces.
2-Make a paste of tomato-ginger and green chili.
3-Heat oil in a kadhai, add jeera and hing. Let it crackle.
4-Add the tomato masala and fry till the raw smell goes. Mix turmeric and dhania powder.
5-Add Dahi and keep stirring till the masala comes to boil. Next mix salt, shakarkandi, and water. Cover and let it cook for 5minutes on medium flame.
6-Lastly add the garam masala powder, coriander leaves and serve hot.
