So I little bit improve my previous recipe. Added bone marrow to the broth, to get more flavor.
Ingredients
2 bones for filling
2 bones for consome
3-4 lb beef or lamb
1 onion
6 garlic cloves
Mix of mexican dried chilies
1/3 cup apple cider vinegar + 1/2 cup water (to soak dried chili)
1 tsp each pepper, thyme, cumin
1/2 cinnamon stick
3 bay leaves
2x12oz lager beer
36oz beef stock
Guacamole
2 avocados
1 jalapeno
1/2 red onion
1/2 bunch of cilantro
Juice from 1 lime
Oaxaca cheese
Burrito tortilla
Beans
Cilantro
Red onion
Broil the bones for 15 minutes on high
Toast dried chilies for 2 min then soak in water+vinegar mixture for 15 minutes. Blend with spices, beer and broth.
Season meat and sear on hight for couple minutes . Add meat, bones and sauce mixture to pressure cooker and cook on medium for 1 hour 30 minutes.
