Idli Chilli | Sanjeev Kapoor Khazana

Readymade idli pieces tossed in spicy sauce with chillies, capsicum and onions.

IDLI CHILLI

Ingredients

10-12 idlis
2-3 green chillies, finely chopped
2 tablespoons oil + for deep-frying
1 teaspoon red chilli powder
1 teaspoon crushed black peppercorns
1 teaspoon dark soy sauce
2 tablespoons cornstarch
1 medium onion
1 medium green capsicum
3-4 spring onion with greens
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
Salt to taste
1 teaspoon vinegar
Spring onion stalk, cut into juliennes for garnishing

Method

1. Quarter idlis and transfer into a bowl.
2. Heat sufficient oil in a kadai.
3. Add red chilli powder, crushed peppercorns and some soy sauce to the idli and mix well.
4. Add some cornstarch and mix well.
5. Deep-fry the prepared idlis in hot oil till crisp and brown on all the sides. Drain on absorbent paper.
6. Dice onion and capsicum.
7. Cut spring onion bulbs into cubes.
8. Heat oil in a non-stick wok, add ginger, garlic and green chillies and sauté for hal a minute.
9. Add spring onion bulbs and onion dices and sauté. Add capsicum and sauté for half a minute.
10. Add some water in the pan.
11. Add salt and remaining soy sauce and mix well.
12. Mix cornstarch and some water in a small bowl till smooth.
13. Add cornstarch slurry to the pan and 3 tablespoons water and mix well. Add fried idlis, crushed peppercorns, salt, vinegar and toss to mix.
14. Finely chop spring onion greens and add to the pan and mix well.
15. Serve hot garnished with spring onion stalk juliennes.
