Easy and budget friendly crockpot lentil chili recipe. This is one of Emma’s favorite recipes that is perfect to make for yourself, your family, or a crowd.
What you will need for this recipe:
1 crockpot, instant pot, slow cooker, etc
1/2 of a yellow onion
1 garlic clove
1 red bell pepper (could be green, yellow, orange, whatever color you want)
1 can of black beans (any bean will work)
1 can of diced tomatoes
1 can of refried black beans
32 ounces of vegetable broth
2 teaspoons of Himalayan salt
1/2 pound of green lentils (could be black or red lentils)
2 tablespoons of chili powder
Optional: green onions, cilantro, avocado (toppings)
Cooking directions:
Set crockpot on medium heat for 6 hours
End result:
Delicious lentil chili that serves about 6 people. Enjoy!
