Ingredients
1 kg Mutton
2 Onions (medium size)
2 tomatoes (medium size)
2 Tbsp. Ginger garlic paste
2 Tbsp. Salt OR (to taste)
½ cup water
1 cup vegetable oil
2 ½ Tbsp. Red chili powder OR (to taste)
½ Tbsp. Turmeric powder
1 Tbsp. Kashmiri chili powder
1 ½ Tbsp. Coriander powder
2 ½ cups chana dal (split chickpeas)
1 ½ Cup Water OR (as required)
½ Tbsp. Garam masala powder
Cilantro half a bunch
Green chili
Ginger julienne cut

For Stock
1 kg mutton (with bone)
Salt 1 Tbsp. to taste
2 inches ginger
10 – 12 pods garlic
1 medium onion
2 tbsp fennel seeds
2 tbsp coriander seeds
1 1/4 tsp black peppercorns
7 – 8 cloves
2 – 3 black cardamoms
1 anise seed
8 cups water
For Pulao
1/4 cup cooking oil
1/2 medium onion
1 1/4 tsp cumin seeds
1/4 tsp black cumin seeds
4 – 5 green cardamoms
2 – 3 cinnamon sticks
1 – 2 pinch turmeric powder
5 – 6 cloves
1/2 tsp. black peppercorns
2 – 3 bay leaves
1 tbsp. green chilies chopped
2 tbsp. ginger garlic paste
1/2 yogurt
1 medium tomato
3 cups rice

3 – 4 Tomatoes (medium) (tamatar)
2 Tbsp. Ginger Garlic cube (adrak lehsun)
2 Cups Water (paani)
2 Tsp Red Chili powder (Lal Mirch)
1 Tsp. Kashmiri Chili Powder (Kashmiri Mirch)
1/2 Tbsp Salt or to taste (namak)
1 Tsp. Turmeric Powder (Haldi)
2 Tsp. Coriander Powder (sookha Dhania)
1/2 cup Ghee or Vegetable Oil (tail)
1/2 Tsp Crushed White Cumin seeds (said Zeera)
1/2 Tsp. Crushed Black Cumin Seeds (Shah Zeera)
1 & 1/2 Tsp. Crushed Pepper (Darra Lal Mirch)
1/2 Tsp. Crushed Black Peppercorns (kali Mirch)
1 Tsp. Whole spice Powder (garam masala)
3 – 4 Green Chilies (Chopped or Whole) (sabaz mirch)
Handsful Fresh Coriander (sabaz dhania)

3/4 cup oil (tail)
2 big size onions (payaz)
4 medium Tomatoes (tamatar)
1 tbsp red chili powder (lal Mirch) or to taste
1 tsp salt (namak) or to taste
1 tsp kashmiri Red chili (kashmiri mirch)
1 tsp. turmeric (haldi)
6 Brains (maghaz)
1 tsp whole spice powder (garam masala)
5 – 6 green chilies (whole or chopped) (optional)
Fresh Coriander handful chopped (optional)
Ginger if required (optional)
