Ingredients-
2lbs of ground beef
1 large yellow onion, diced
2 cans of Rotel original, drained
1 Rotel can of water
1 (15oz) can of tomato sauce
1 (16oz) can of kidney beans, drained
3 tsp of chipotle peppers in adobo sauce, more or less depending on how hot you want your chili.
1/3 cup chili powder, yes you read that right! Why do you think it’s called chili?
½ tsp ground cumin
2 tsp oregano
2 tsp smoked paprika
2 tsp salt
3 tsp minced garlic
Directions-
1. In a large Dutch oven, start browning the ground beef over medium heat. When the meat is about halfway cooked, add the onion. If there is a lot of grease in the bottom after its all said and done, use a spoon to get the excess grease out of the pan.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers, along with the spices, and garlic.
3. Bring the temperature up until the chili begins to boil. Once you get a low boil, reduce the temperature to low and simmer covered for 45 minutes. Make sure to stir the chili every 10-15 minutes to ensure that the beans are not burning on the bottom.
4. Serve generous portions of the chili to your family and friends and top as you like.
