Welcome back to my 2nd episode! On this episode, we head to our neighborhood Fred Meyers store in WA and our goal is to spend no more than $25 on clean, simple, healthy ingredients that will cook up 3 meal prep recipes! $25 or less is the goal! Let’s see if that can be done??? 🤔 Watch and find out!!!
Veggie chili recipe Ingredients
1 – 2 cans of tomato sauce
1 can pinto beans
1 can black beans
4 celery stalks
3 carrots
1/2 of a yellow onion
1 green bell pepper
1 half of a big sweet potato
Eyeball your spices: I am using black pepper, pink salt, and paprika
Instructions:
Cut all of veggies
1. Using a big pot, add any type of oil you like, about 2 tablespoons
2. Add 1/2 tablespoon of minced garlic and brown garlic and until fragrant
3. Add cut veggies into pot
4. Add your favorite seasonings
5. Stir around veggies for about 5 minutes
6. Add your beans
7. Add tomato sauce 1 1/2 cans
8. Add a bit of water in there if you like your chili a little watery, but if you like it thick like me, add more of the sauce
9. Stir around
10. Cover pot with a lid
11. Let sit for 35-40 minutes on low heat and stir occasionally
12. Pair with cauliflower rice, brown rice, white rice or whatever you would like!
