When Mahadeviah Gowda, a lab assistant in a junior college looked for avenues to augment his income 25 years ago, he hit upon the idea of an egg rice cart in the suburb of Rajajinagar in West Bengaluru. Wanting to keep things simple, his preparations shun typical egg rice ingredients such as green chillies, capsicum tomatoes, ginger and garlic, in favour of a home blend of minimal dry spices and an explosively hot chilli mix.
