Ingredients
• 1.5 Cups Cauliflower, Small Florets (Frozen Or Fresh)
• 1 Tsp Fennel Seeds
• ½ Tsp Cumin Seeds
• 2 Cloves
• 3 Tbsp Olive Oil
• 1.5 Tsp Salt
• 2 Garlic Cloves, Chopped
• 1 Onion, Chopped
• ½ Tomato, Chopped
• ¼ Tsp Turmeric Powder
• ¼ Tsp Red Chili Powder
• ¼ Tsp Coriander Powder
• 1 Green Chili, Chopped
• ¼ Tsp Dry Mango Powder
• Fresh Coriander

Method
• Chop cauliflower into small florets for the recipe. You can choose fresh or frozen cauliflower depending on the availability.
• For preparing the Spice Mix, add 1 tsp fennel seeds, ½ tsp cumin seeds & 2 cloves in a Mortar Pestle. Coarsely crush them into a powder.
• Now, heat 1.5 tbsp olive oil in a pan over medium to high flame and add cauliflower florets.
• Cover and cook the florets for 7-8 mins
• Add salt and cook for another 5 mins. Then, remove from the Pan.
• In the same Pan, heat 1.5 tbsp olive oil again. Add 2 chopped garlic cloves and saute till raw aroma goes away. Then, add chopped onion and saute till translucent.
• Add the prepared spice mix, chopped tomato, turmeric powder, red chili powder and coriander powder. Mix all the spices well.
• Now, add the sautéed florets and chopped green chili. Cover the Pan and cook for another 5 mins or till florets are cooked properly.
• Add dry mango powder and mix well.
• Garnish with coriander leaves and serve hot with keto roti/naan/poori.
