Gutti Vankaya Curry | Cook with Comali 3 Recipe | Andhra Style stuffed Brinjal Curry #cookwithcomali

Hi,in this video we can see how to make gutti vankaya curry in Tamil.This recipe was prepared by Roshini in Cooku with Comali show telecasted on Vijay Television.

GUTTI VANKAYA CURRY | COOK WITH COMALI RECIPE

INGREDIENTS

brinjal – 4
Peanuts – 2 tsp
onion – 1½
turmeric powder – ½ tsp
kashmiri chili powder – 1 tsp
chili powder – ¾ tsp
white sesame – ¾ tsp
coriander – 1 tsp
cumin – 1 tsp
Fenugreek – ¼ tsp
small piece cinnamon
cardamom – 2
cloves – 2
green chillies – 2
grated coconut – 2 tsp
small piece ginger
garlic cloves – 3
mustard
curry leaves
coriander leaves
tamarind
water
salt
oil

METHOD OF PREPARATION

1.Roast 2 tsp peanuts and remove the skins.Add ¾ tsp white sesame,½ tsp cumin,1 tsp coriander,¼ tsp fenugreek,small piece cinnamon,2 cloves and 2 cardamom.
2.Roast until you get a nice aroma.Then add 2 tsp grated coconut and saute for 2 more minutes on low flame.The color of coconut need not change.
3.Let it cool down and then transfer it to a mixy jar.Add small piece ginger,3 garlic cloves,½ onion,¼ tsp turmeric powder,1 tsp kashmiri chili powder and required salt.Grind it to a nice smooth paste.
4.Cut 4 brinjal on top like a plus shape and stuff the masala inside.
5.Heat some oil in a kadai,splutter a few mustard and add ½ tsp cumin,a few curry leaves,2 green chilies and saute for 2 minutes.
6.Add 1 onion and continue to saute.When the onions are cooked and becomes soft,add ¼ tsp turmeric powder,¾ tsp chili powder and saute until the raw smell of spices goes.
7.Add the stuffed masala and cook with the lid closed after stiring it for 2 minutes.
8.Stir in between while cooking the brinjal.When the brinjals are half cooked add the remaining masala and required tamaring water.Mix well.
9.Add water as required.Cook the brinjal with the lid closed.
10.At last add some corinader leaves and mix well.
