Dad whipped up some quick and easy Instant Pot chili and figured why not give Frito Pie a try. Frito pie is just chili on top of Fritos with whatever topping you like. It was actually delicious!!
So, if you are looking for something to do with your awesome instant pot chili then give Frito pie a spin.
Instant Pot Chili Recipe:
1 tbsp olive oil
1 pound ground beef
1 diced onion
2 tablespoons of chili powder
OPTIONAL
Spicy Stuff
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp cumin
1 15.5 oz can of red kidney beans
2 14.5 oz can of diced tomatoes
1 6oz can of tomato paste
2 cups of broth
1 tablespoon of corn starch
Salt & pepper to taste
Instructions:
1. Turn Instant Pot to sauté high
2. Add Olive oil and brown the meat, may have to do in batches depending on size of IP.
3. Drain Excess oil if needed.
4. Add everything else and mix.
5. Cook on Manual/Pressure Cook High for 25 minutes.
6. Allow for a 10 minute Natural release.
OPTIONAL STEP:
Mix 1 tbsp of cornstarch with 1 tbsp of cold water. Add to chili and mix. Let it simmer uncovered for 5 minutes to thicken chili. You can add more cornstarch & water to get to the thickness you like.
FRITO PIE
Basically put Fritos on a plate, top with shredded cheese, chili and more shredded cheese. You can add jalapeño, green onions or whatever else you like.
