It’s my favorite day of the week, Meal Prep Monday!!!! I am so excited to be kicking the week off on a positive note. Here is a super quick meal prep thats easy and delicious. It took literally no time at all (an hour including clean up time). I didn’t have a lot of time to prep but I had to get it done #noexcuses

Recipes
Tuna Salad
– 3 cans of tuna (in water)
– 5 to 6 stalks of celery
– 1/2 of a red onion
– 1/4 to 1/2 a cup of mayo (I used vegan mayo)
– 1 tsp of each seasoning (I used trader joe’s green goddess seasoning, black pepper, garlic powder and red chili flakes)
Directions
– drain tuna
– clean and finely dice celery and onion
– in a large mixing bowl, combine tuna, veggies, mayo and seasonings.
– store in the fridge for up to 5-6 days
Taco Salad
Ingredients
– 2 lbs of lean ground turkey
– 2 packets of taco seasoning
– romain lettuce
– 1 large tomato
– 1 can of black beans
– shredded sharp cheddar cheese
– whole wheat tortillas
Directions
– Cook 2 lbs of ground turkey
– When turkey is fully cooked, add 2 packets of taco seasoning (follow the directions on the seasoning packet)
– wash and chop a whole tomato
– rinse and drain 1 can of black beans
– wash and shred 3 romain hearts
– cut tortilla in 12 triangles, spray with spray oil and season (I used cumin, chili powder, and paprika)
– air fry the chips at 400 degrees for 5 to 6 minutes
– assemble
