Barbeque Cones:

INGREDIENTS

Chicken boneless ½ kg
Tikka masala 2 tbsp
Ginger garlic paste 1 tbsp
Lemon juice 1 tbsp
Curd ½ cup
Crushed red chilies 1 tsp + 1 tsp
Sweet corns ½ cup
Cream cheese 3 tbsp
Cheddar cheese 2 tbsp
Chili garlic sauce 2 tbsp
Charcoal 1 (for smoke)
Roll patty as required
Oil 2 tbsp

FOR COATING

Egg 1
Flour 2 tbsp
Bread crumbs 1 cup

METHOD

Cut chicken into small cubes. Marinate it with ginger garlic paste, tikka masala, curd, lemon juice and crushed red chilies for half an hour. Boil chicken until the water gets dry and chicken gets tender. Mash chicken cubes with spoon, add sweet corns in it. In a separate pan heat oil, add crushed red chilies and chicken mixture. Mix well and allow it to cool. Give coal smoke. Add cream cheese, chili garlic sauce and cheddar cheese. Mix well. Now make cones of roll patty, add the chicken filling and cover it with coating batter. Cover it with bread crumbs. Lastly deep fry it in hot oil. Serve.

Cheesy Pockets:

INGREDIENTS

Chicken fillets ½ kg
Green chili paste 1 tbsp
Meat tenderizer 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Ginger garlic paste 1 tbsp
Oil for frying

FOR THE FILLING

Mint leaves ½ bunch
Fresh garlic 3 cloves
Fresh coriander ½ bunch
Salt to taste
Desiccated coconut 2 tbsp
Lemon juice 1 tbsp
Roasted cumin seeds 1 tsp
Cheddar cheese 1 cup
Chicken powder ½ tsp

FOR COATING

Egg 1
Flour 3 tbsp
Water 2 tbsp
Bread crumbs 1 cup

METHOD

Cut the chicken fillets into pocket shapes. Marinate it with all the ingredients for about an hour. Make green chutney with all the filling ingredients except cheese. Fill the chicken pockets with green chutney and cheese cubes. Cover with batter and coat with crumbs. Lastly deep fry in hot oil and serve.

Pizza Bread Rolls:

INGREDIENTS

Chicken boneless cubes ½ kg
Red chili powder 1 tsp
Lemon juice 2 tsp
Curd ½ cup
Crushed red chilies 1 tsp
Pizza sauce 4 tbsp
Bread slices 6
Capsicums (cubes) 1 cup
Black olives 1 cup
Mozzarella 1 1/2 cup
Cheddar cheese 1 1/2 cup
Ginger garlic paste 1 tbsp
Cumin powder (roasted) 1 tsp
Oregano 2 tbsp
Oil as required

FOR COATING

Egg 1
Flour 2 tbsp
Bread crumbs 1 cup

METHOD

Marinate chicken cubes with red chili powder, lemon juice, curd, cumin powder, ginger garlic paste for about ½ an hour. Then heat oil and cook the chicken until tender. Now remove the corners of bread slices, add pizza sauce. Place chicken, capsicums and olives. Also add cheese, oregano and red chilies flakes. Make rolls and freeze it for ½ an hour. Cut into half and cover it with coating batter. Cover with bread crumbs. Lastly deep fry them in hot oil. Serve.
