Ingredients:
Legumes:
1 Cup Dried Black Beans (or 1 Lg Can) – Pressure Cooked 20 min
1 Cup Dried Kidney Beans (or 1 Lg Can) – Pressure Cooked 20 min
1 Cup Dried Garbanzo Beans (or 1 Lg Can) – Pressure Cooked 25 min
½ Cup Yellow Lentils – Boiled until tender
½ Cup Green Lentils – Boiled until tender
Spices:
4 Bay Leaves
3 Tbsp Oregano
3 Tbsp Smoked Paprika
1 Tsp Cumin
1 Tsp Adobo (if you don’t have it, you can adjust with Salt & Pepper)
½ – 1 Tsp Chili Flakes
½ – 1 Tsp Red Chili Powder or Cayenne Pepper
Salt & Pepper to taste
2 Cups Vegetable Stock
3 Tbs Olive Oil
Vegetables:
2 Onions
6 Garlic Cloves
3 Celery Stocks
2 Jalapenos
3 Peppers (Multi Colored for Fun!)
2 Carrots
2 Tomatoes
1 Lg Can Crushed Tomatoes
1 Cup Cilantro
2 Cup Corn
Optional:
1 Pack Meatless Ground Beef
