2/3 cup buttermilk shaken
2 large eggs
1/4 cup melted butter (that’s slightly cooled)
1 cup all-purpose flour
2/3 cup cornmeal
4 tbls sugar
1 tbls baking powder
1/2 tsp kosher salt
1 cup shredded cheddar cheese
Chili:
1 pound ground beef (or vegan meat)
1 (15-ounce) can Chili Magic
1 (15-ounce) can diced tomatoes, drained
Preheat oven to 350F. Whisk together the buttermilk, eggs and melted butter. In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder, salt and cheddar cheese. Pour in the wet ingredients and mix until combined.
In a pan, cook the ground meat or vegan meat over medium heat. Pour in the magic chili and diced tomatoes. Mix until combined and cook until warmed for about 5 to 7 minutes. Pour the cornbread mixture on top and smooth it out on top. Transfer to the oven to bake for 30 to 35 minutes.
