Quick & Easy Can-Do Chili šŸ‘‡Recipe
Get those canned goods out of your pantry and into this quick & easy chili! Tastes great as is or customize with your own special tweaks.

2 T. olive oil
1 large onion, diced
2 cloves garlic, chopped
1 jalapeƱo, seeds removed & finely chopped (optional)
1 lb. ground beef or ground chicken
1 t. kosher salt
½ t. ground black pepper
28 oz. can whole peeled tomatoes (San Marzano preferred)
28 oz. can tomato sauce or purƩe (puree will make a thicker chili)
15 oz. can light kidney beans
15 oz. can dark kidney beans
2 sweet peppers, large dice
¼ cup chili powder

1. In a large pot heat oil over medium heat, then add onions. SautƩe for 3-5 mins. or until soft.
2. Add in garlic and, if desired, jalapeƱo. SautƩe for 1 minute.
3. Push onion mixture to edge of pot and add ground beef or chicken to center. Start breaking up the meat with spoon or masher. Add salt and pepper.
4. Continue cooking the ground meat until no pink is visible and you’ve broken it up into crumbles. About 5 minutes.
5. Next add in can of whole peeled tomatoes, including the juice. Break up tomatoes with spoon, masher or crush with your hand before adding to the pot.
6. Add in tomato sauce (or purƩe), kidney beans (including the liquid), sweet peppers, and chili powder. Stir to fully combine.
7. Bring chili to a boil, then lower to a simmer. Place lid on pot slightly ajar, leaving enough room for steam to escape.
8. Simmer for at least 1 hour, stirring every 10-15 mins. Taste and add more salt and pepper if needed. Simmer longer if thicker consistency desired.
9. Serve and enjoy!

Topping ideas:
Shredded sharp cheddar
Sour cream
Slice green onion
Pickled jalapeƱos rings
Hot sauce
Saltines or Oyster crackers

Notes:
-Lighten the recipe by using ground chicken instead of beef. It maintains a similar texture and flavor. Ground turkey is ok but can tend to be dry or rubbery.
-To make it even easier, try using fresh or frozen pre-chopped onions and peppers from your supermarket.
– For heat, adding jalapeƱo is optional. You can also try substituting with crushed red pepper, cayenne, chipotles for a smokier flavor, cherry peppers, your favorite hot sauce, or leave it out altogether if you like a less spicy version.
-A lot of recipes call for chili powder plus cumin, garlic powder, etc. Typically, chili powder already has cumin and garlic in it, so I just add a little extra chili powder for a fuller flavor.
-If feeing adventurous, some flavor enhancers you could try include cocoa powder, beer, coffee, or beef broth.
