Vegan "Mexican Style" Chili

Rich, protein packed chili with no meat or by-products. I made a huge batch so keep that in mind when looking at ingredients. You may want to half everything. I don’t cook according to a recipe just intuitively…keep that in mind as well.

Ingredients:
red, orange, and green peppers
3 medium sized Red Onions
4 large cloves of garlic
salt and pepper to taste
1 tsp of cumin
1 tbsp of onion powder
1 tbsp of garlic powder
1 tbsp of smoked paprika
2-3 tbsp of chilli powder
Two cans of Tri-Blend beans (kidney beans, pinto beans, black beans)
1 cup of Lentils ( I used yellow)
Two cans of chili-ready tomatoes
Large can of diced tomatoes
8 cups of veg broth
10.75 oz can of tomato puree
Bag of chopped Kale (cleaned)
4 cups of roughly chopped Zuchinni
3-4 bay leaves
1 tbsp of oregano
1/2 tbsp of thyme
