Join me and “Cook With Me” as we make a super easy and budget friendly Chicken Chili
1 Can of Chopped Tomatoes 🍅 (preferably fire roasted and organic)
1 can of kidney beans
1 pound of ground meat (chicken, turkey, or beef) – Inused ground chicken for this recipe
1 packet of Original Chilli Seasoning by McCormicks
1 cup of chopped onion
12-15 garlic cloves mined or cut up in food processor
1 tsp paprika
1 tsp garlic powder
1 tsp of cayenne pepper
1-2 tsp of brown sugar (as you like it) or if you’re watching your sugar intake use 1 packet of Stevia (healthy natural herbal sugar substitute)
Sharp cheddar cheese, sour cream and chopped green onion to garnish
Directions:
Cook ground meat and onion and minced garlic in large skillet on medium-high heat 5 minutes, stirring occasionally. Drain fat.
Stir in Seasoning Mix and remaining ingredients. Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
Serve with shredded cheese, sour cream and chopped onion, if desired.

Optional (Cornbread) as a side:
1 pack of jiffy corn muffin mix
1/3 cup of Coconut milk from the can
1 egg
1 tablespoon of agave blue syrup (optional to add sweeter taste)
Directions:
Preheat oven to 400°F. Grease muffin pan or use paper baking cups.
BLEND ingredients. Batter will be slightly lumpy. (For maximum crown on muffins let batter rest for 3 or 4 minutes, stir lightly before filling cups.)
FILL muffin cups 2/3 full.
BAKE 15 – 20 minutes or until golden brown.
