Cook With Me: Sweet Chili Recipe

Join me while I cook Jon’s number one requested meal! This is the perfect meal to bring to potlucks or serve up in the crockpot for a delicious, filling meal!

Ingredients:
2 tbsp avocado oil
3-4 cloves garlic
1 small yellow onion, chopped
1 1/2 bell pepper, chopped, seeds removed
1 serrano pepper, finely diced, seeds removed
1 lb ground beef
1 cup water
1 tbsp better than bouillon beef base
1 6 oz. can tomato paste
2 tbsp worcestershire sauce
1/3 cup brown sugar
2 cans 14.5 oz. diced tomatoes or 4 fresh diced tomatoes
1 can 14.5 oz kidney beans, rinsed and drained
1 can 15.25 oz. corn, drained
2 tbsp chili powder (divided)
2 tsp paprika (divided)
2 tsp ground cumin (divided)
2 tsp Trader Joe’s Chile lime seasoning (completely optional) (divided)
Salt & Pepper to taste

Instructions:
In a dutch oven or pot, sauté garlic, onion and peppers in oil for about 2 minutes. Season with half of the chili powder, cumin, paprika and Chile lime seasoning. Add in ground beef and salt and pepper. Cool until beef is browned.

Once browned, add tomato paste. Stir until well combined and cook for 2-3 minutes. Add in worcestershire and beef stock, mix well. Add brown sugar, beans, corn and diced tomatoes. Stir in remaining chili powder, cumin, paprika, Chile lime seasoning, salt and pepper. Adjust seasonings as needed. Allow to cook low and slow – as long as you’d like.

Couple things: this can easily be dumped all into a crockpot! You’ll just need to brown the beef first separately. 9 times out of 10 I do it in the crockpot but today I was feisty.

I divide the seasonings in this way because I really think layering seasonings makes a difference in the flavor. I could be crazy. Actually, I am crazy but that’s fine.

If you aren’t sure on the brown sugar, start with a tablespoon or two first and then increase. For us, it’s the only way to have chili now.
