SAUSAGE CHIILI FRY
Ingredients
5-6 chicken sausages, cut into ½ inch pieces
2 tablespoons oil
1 tablespoon chopped garlic
1 inch ginger, finely chopped
1 medium onion, thickly sliced
1 medium green capsicum, sliced
1 teaspoon dark soy sauce
Salt to taste
Crushed black peppercorns to taste
2-3 tablespoons cornstarch slurry
Method
1. Heat 1 tablespoon oil in a non-stick pan. Add chicken sausages, mix and cook till golden brown or till done.
2. Heat remaining oil in another non-stick pan. Add garlic and ginger and sauté for 30 seconds. And sauté for 30 seconds.
3. Add onion and sauté for 30 seconds. Add capsicum and sauté for 1 minute. Add soy sauce and green chilli sauce and mix well.
4. Add cooked chicken sausages and mix. Add salt and crushed peppercorns, mix and cook for 1 minute.
5. Add 3-4 tablespoons water and mix. Add cornstarch slurry, mix and cook till the mixture thickens.
6. Serve hot garnished with spring onion greens.
