Ingredients:
3 tsp olive oil
1 1/2 lb ground turkey
1 yellow onion (finely chopped)
4 garlic cloves (finely chopped)
1 sweet red pepper (cored, deveined and chopped)
2 celery stalks (chopped)
1 jalapeno pepper (cored, deveined and finely chopped)
1 tbsp fresh oregano (chopped, OR 1 tbsp dried oregano)
2 bay leaves
2 tsp ground cumin
3 tbsp chili powder
3 cups canned diced tomatoes
2 cups chicken broth
1/2 tsp salt
1/2 tsp pepper
2 15 oz cans red kidney beans (drained and rinsed)
shredded cheddar cheese (optional topping)
sour cream (optional topping)
avocado (optional topping)
tortilla chips or strips (optional topping)
jalapeños (optional topping)

Instructions:

1. In a large heavy bottom pot, heat your olive oil over medium high heat. Add in the ground turkey and cook for about 5 minutes until lightly browned. Stir regularly and break up ground turkey into smaller pieces with cooking spoon.
2. Once the turkey is browned, add in the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, cumin, and chili powder. Cook for 5 minutes while stirring occasionally to combine flavors evenly.
3. Next, add in the tomatoes, chicken broth, salt and pepper. Bring the chili to a boil, then reduce heat to a gentle simmer and cook for 15 minutes. Continue stirring occasionally while cooking.
4. Next, add in the red kidney beans (drained) and cook for 10 more minutes while stirring occasionally.
5. Serve chili hot in individual bowls with your favorite toppings like shredded cheddar cheese, sour cream, sliced avocado, or tortilla chips.
