CHICKPEA CHILI
1 15oz can Chickpeas, drained and rinsed
14.5oz can Whole Tomatoes, peeled, no salt added
1 small Red Onion, chopped
1 Bell Pepper, chopped
1/2 cup Corn, rinsed and drained
2 tbsp Chili Powder
2 tbsp Cumin
1 tbsp Ground Paprika (only 1 tsp if Smoked Paprika)
1 tbsp Olive Oil
2 cloves Garlic
2 Scallions
Optional toppings: 1 small jalapeño
