Homemade Noodles with Garlic Chili Sauce!
Recipe:
For the Noodles: 500g of bread flour, 5g of salt, 5g of sodium carbonate, 200g of water.
Combine all the ingredients and make sure all the flour is hydrated. Rest the dough for 1 hour. Knead the dough between two sheets of plastic (cover with bag also and use your feet to knead because its a tough dough). Divide and use a pasta machine to flatten and make noodles.
For the Sauce: 2 Tbsp of Dark soy sauce, 2 Tbsp of light soy sauce, 3 cloves of garlic, crushed red chili flakes, 1 tbsp of sugar, 1 tbsp of rice vinegar, 1 tbsp of sesame oil.
