Thai Pineapple Curry! I make this vegan curry at least once a week because it’s absolutely delicious, healthy and a great way to use up extra veggies in the fridge! I like to call this an “American Thai Curry” because a lot of the authentic thai ingredients I can’t find in my supermarket so this is a more america version while keeping the amazing taste of thai curry!
Recipe
1 tbsp coconut oil
1 yellow onion chopped
3 cloves garlic
1 thumb sized piece of garlic
3 carrots
1 head of broccoli
1 red bell pepper
White mushrooms
1 can coconut milk
1-2 tbsp red curry paste
1-2 cups veggie broth (depending on how much broth you like)
2 tbsp soy sauce
1-2 tbsp coconut sugar
1 tsp chili garlic oil (depending on how spicy you like it)
Juice of one lime (or sub 1 tbsp rice wine vinegar)
1 cup chopped pineapple
Protein of choice I used Traders Joes teriyaki tofu
Salt to taste or more soy sauce
Top with lime juice and cilantro
Start by heating your oil and adding your onion, garlic and ginger. Sauté for 5 minutes. Add carrots, bell pepper and mushrooms and cook for 5 more minutes. Add curry paste and cook stirring for 1-2 minutes. Add coconut milk and veggie broth. Cover and simmer for 15 minutes. Add soy sauce, coconut sugar, chili sauce, lime juice and pineapple. Cook for ten minutes while frying your tofu in a separate pan. Add tofu to your wok and taste to see if you need any more seasonings. Top with cilantro and lime juice ( and if you love spicy food like me some chili garlic sauce) ! Enjoy 🙂
