Chili…are you ready for this!!

Using my garden veggies in everything is no problem for me. My canned tomato sauce, fresh diced tomotoes, hot peppers, beans and fresh & dried herbs…voliala another batch of chili for the books.

This can be made vegetarian/vegan or dressed up however you like. You can’t go wrong with chili recipes, just use whatever you have on hand.

•3 lb ground beef (omit this step if making vegetarian) browned with all the seasoning spices listed below.

•2 medium green peppers (mix of sweet red, yellow, orange peppers for added sweetnesss). Have fun with any mix of peppers you like most.

• 2 medium hot peppers to spice it up! (JalapeƱo, Red Hots, Chili Peppers or even ghosts if you can go there.) Add 1 or 2 tsp chili flakes if that is all you have on hand.

•1 large onion (red, white, sweet, scallions, shallots or green onion) of your choosing.

Mix in:
• 1 large jar home canned or store bought tomato sauce
• 1 can dark red chili beans (or any garden grown or canned type beans you like)
• 1 can black beans (optional)
• 2 large fresh red tomatoes diced

My Homemade Chili Seasoning Mix:

• 2 tbsp Chili Powder
• 1/2 tsp Paprika
• 1/2 tsp Onion Powder
• 1 tsp Garlic Powder
• 1/2 tsp Cumin Powder
(• 1/2 tsp hot pepper flakes optional if short on hot peppers)

Tip: Tripling these seasoning amounts to keep on hand in a jar for future use saves time and a good way to always have a ready batch of chili seasoning mix available.

Season to taste:
• 1 tsp black Pepper
• 1 tsp salt

Additional ingredient:
• 2 tsp sugar (this balances out the tomoto acidity and the heat of peppers).

Adding juice of the canned chilies gives chili extra heat and takes things to the next level!

***Making vegetarian: Just omit meat and add carrots, more beans, other veggies like corn or pinto beans…this is just as yummy as the beef version!!!

Top with any cheese you like (sour cream, cheddar cheese, pepper jack or motzerella). Garnish with green onions.

For a fuller meal serve over rice, over chips, with your hot dogs, on baked potatoes or with corn bread! šŸ˜‹
