So here’s what I had to work with:
Ground Turkey
Tomato Paste
Chicken Stock
Frozen Cauli
Frozen Pepper
Cream Cheese
Pinto Beans
No pre-seasoned ingredients so I went with my go-to batch of spices that coats ANY combo of protein and veggies with just the right amount of flavor for me.
(But for real, don’t forget the fat – sour cream, cheese, bacon, avocado or something to thicken it up.)
Seasonings (good for 1lb meat plus the other ingredients)
1 tsp garlic powder
1 tsp cumin
2 tsp chili powder
2 tsp seasonings you love (for me there was a sea salt/pepper/garlic/onion blend that I added, but salt, pepper, onion powder would also be a good mix here)
Obviously you’ll have different ingredients if you are ‘cleaning out the fridge’ but I hope you see how easily interchangeable a one pot meal like this is!
-Use ground beef, bison, shredded chicken
-Use any kind of beans
-Use tomato sauce or salsa if you don’t have tomato paste (just don’t add liquid)
-Use unflavored greek yogurt if you don’t have cream cheese
-Skip the frozen veggies and dice up whatever is left on your countertop
– If you have enchilada sauce you can use that in place of a lot of the seasonings – just add salt + pepper!
It’s really a perfect way to combine macros and flavors when you’re down to a bare bones kitchen because any combo you assemble is going to be balanced and work with your preferences!
