
**Ingredients:**
1 cup cooked rice
2-3 tbsp tamari/soy sauce, to taste.
1 tsp fish sauce
4 tbsp lao gan ma, more to taste later.
1 large carrot chopped into small pieces
1 cup broccoli florets
1/4 medium white onion, diced
3-4 cloves garlic, diced
Veggie oil, could also use something like a chili oil.
2 eggs
Crushed red pepper flakes (and/or anything else, I added some reaper flakes too)
**How to:**
Heat a med/large skillet (I used a smooth bottomed well seasoned cast iron pan) to med/high heat. Add a bit of oil to the pan, once it’s hot add the diced onion, diced garlic, broccoli, carrot, lao gan ma, crushed red pepper, 1/2 the tamari/soy sauce, and the fish sauce, and pepper flakes.
Fry this on med/high heat until the carrots and broccoli begin to tenderize and the onions become a bit cooked. The lao gan ma will be nice and fragrant at this time.
Once the veggies are cooked and no-longer raw – push them aside around the rim of the pan while still on med/high heat. Add a bit more of the oil to the middle of the pan, and crack the two eggs into the middle. If your pan is hot enough, it should start cooking them immediately. Once they start to cook a bit scramble them up. Stir everything very well, you should have nice uniform small chunks of the fried egg dispersed throughout the veggies now.
Add in the rice and stir it all around. Add in the rest of the soy sauce/tamari. Add any additional pepper flakes or extra lao gan ma. I add a good amount at this time.
It’s a super ez and cheap recipe that is very tasty and filling.
