Seeds vs. Fruits vs. Hot Sauce & Making My Own


I love peppers and spicy food, though nothing too insane. For fresh, I mostly buy jalapenos and habaneros. I do use a wide variety of seeds both whole (dried) and ground – gochugaru, cayenne, kashmiri, aleppo and a near complete set of [Flatiron Pepper Company’s amazingly flavorful blends](https://www.flatironpepper.com). But for some reason, I find I rarely use much hot sauce. Sure, I have a few bottles around, but they just don’t get used much. I’ve even had to throw some away – when the color changed enough to make me less likely to eat them yet! Here there is so much talk about hot sauces. (I love how their flavor – not just spiciness – is discussed!) What do you guys use them on? I was thinking that it would be fun to make my own hot sauce, but then got to wondering what I would use it on! What makes you reach for a hot sauce over the peppers in them? What does a hot sauce do to elevate or change the pepper experience to make it more suitable or preferable for some food items?
