What my kids eat in a typical day
Chili Recipe
1 onion, chopped
4 cloves of garlic, minced
1 yellow squash, chopped
1 zucchini, chopped
1 ½ cups frozen or canned corn
60 oz canned diced tomatoes
2 Tablespoons coconut sugar
1 tablespoon mustard
1 tsp salt
4 tablespoons chili powder
4 ½ cups prepared beans or 3 cans of beans (I used pintos, black beans, and chickpeas)
-Wash and chop all of the vegetables. You can cook this on the stove or on the saute function on your instant pot.
-Add a little water to the bottom of the pot, and when hot, add the chopped onion. Cook for a few minutes until the onion starts to brown a little then add the minced garlic. Cook for another minute and add the squash and zucchini to the pot.
-Once your veggies are brown, add frozen or canned corn, diced tomatoes, and then seasoning. Then add beans and give it a stir. Simmer for about 30 minutes or use the pressure cook setting on the instant pot for 8 minutes.
-Top chili with avocado, cilantro and jalapenos, and a few tortilla chips on the side.
