* 1Ā TbspĀ Avocado OilĀ or olive oil
* 1Ā mediumĀ White OnionĀ diced
* 1-2Ā JalapenoĀ seeded and diced
* 2-3Ā Garlic ClovesĀ minced
* 1Ā TspĀ Oregano
* 1Ā TspĀ Ground Cumin
* 1Ā TspĀ Ground Coriander Seed
* 1Ā 4.5ozĀ Can Green ChiliesĀ or salsa verde
* 3Ā CupĀ Shredded Rotisserie Chicken BreastsĀ or make your own
* 5Ā CupsĀ Homemade or low-sodium chicken broth
* Kosher salt and pepper, to taste
* 1Ā CupĀ White BeansĀ drained and rinsed
* 1Ā CupĀ Pinto BeansĀ drained and rinsed
* 1Ā CupĀ Garbanzo BeansĀ drained and rinsed
* 1Ā CupĀ Red Kidney BeansĀ drained and rinsed
OPTIONAL TOPPINGS:
* Full-fat Greek yogurt, freshly chopped cilantro, shredded Monterey Jack, chopped avocado, crushed corn tortilla chips, etc.
Instructions
* Heat oil in a large pot, over medium heat. Add onion and sautƩ until soft, about 4-5 minutes.
* Add in jalapeƱo, garlic, oregano, cumin, and coriander, and cook for 1 minute more. Stir in the green chilis, beans, chicken, and broth, then bring to a boil
* Once boiling, reduce the heat to a simmer and cook for about 15 minutes to allow the flavors to meld.
* Serve the chili soup into bowls and top with desired toppings. Enjoy!
