Over the Top Chili

Chili Recipe:
🔥2 pound ground beef & chuck
🔥1 pound ground pork
🔥1 egg
🔥3 medium red onions – chopped
🔥1 head of garlic – chopped
🔥2 28oz can crushed tomatoes with juice
🔥1 28oz Italian style diced tomatoes with juice
🔥1 7oz can Chipotles in Adobo Sauce chopped.
🔥1 beer
🔥4 tbsp meat church chili seasoning
🔥 1 can bush maple beans

Garnish
🔥Shredded Cheese
🔥Cilantro
🔥Jalapeño

This is my favorite fall Chili recipe on the Kamado Joe. We are going to setup the Kamado Joe with Big Block lump charcoal with cherry wood chunks barrier beneath the lump.

We will setup the Kamado Joe with the X-Accessory rack in the middle tier so we can place the 7 qt enameled dutch oven into as we prepare to smoke. We are setting the Kamado Joe to 275-300. You can insert the dutch oven to come up to temp with your charcoal lit.

You will then place your chopped onions into the oven until it turns translucent. From here, you will add all the remaining ingredients of chopped garlic, diced tomatoes, chopped tomatoes, adobe chipotle sauce, beans, beer and chili seasoning and stir.

We will then place grill grate on top tier. Now, you will start by mixing your ground pork and ground beef together into an oval ball and sprinkle your favorite rub on or chili seasoning. Place meatloaf on top of grill grate.

We will smoke this for 2 hours until meat gets to 145 internal temp, remove and chop into pieces and place into dutch oven. You will smoke for 1 more additional hour for a total of 3 hours.

Scoop your chili into a bowl, and garnish with cheese, cilantro and chopped white onions. Over the Top Chili
