You won’t believe how speedy and simple it is to make this super-flavorful and filling dish! For my WW friends – this baby is ZERO points on Blue and Purple plans and just 4 SP on Green. It’s also great for Gluten Free and Low Carb Diets.
This crowd-pleasing chili takes less than 30 minutes to make and features tender chicken, black beans, corn, and a lightly spicy broth that you can amp up or tone down based on your tastes.
I’ve made this recipe super-light so you can have fun with additional toppings like crushed tortilla chips, light shredded Mexican 4-cheese, and a dollop of sour cream or Greek yogurt. Make a big batch for Super Bowl this weekend and just set out a toppings bar to let everyone garnish their own hearty bowl.
