– 2 tbsp olive oil
– 2 tsp chopped garlic
– ½ cup chopped white onion
– ½ cup chopped carrots
– ½ cup chopped bell peppers/broccoli
– 1 can boiled beans (white/butter/kidney)
– 4 cup vegetable stock
– ½ cup chopped tomatoes
– 2 bay leafs
– ½ cup chopped parsley
– 2 tbsp Taco Spices (Oregano, Paprika (mild/sweet/smoked) Cumin, Brown sugar, Pepper)
– Salt and pepper to taste
– Olive oil / coconut cream for topping
– Crusty bread to serve

– 1 sprig thyme
– 2 tbsp chopped celery

– ½ -¾ cup milk of choice
– 4 cup vegetable stock
