Chili Cheese Dog Enchiladas!

ONLY TRY THIS IF YOU LOVE CHILI CHEESE DOGS! Chili Cheese Dog Enchiladas. Recipe below (makes 8)

INGREDIENTS
8 hot dogs
8 flour tortillas
8 slices of cheese
2 cups grated cheese (cheese blend)
1 pound ground beef
1 diced poblano pepper
2 diced jalapeno peppers
1 diced Anaheim pepper
1 large diced onion
2 minced cloves of garlic
1/4 cup tomato paste
1/4 cup cocoa powder
2 cups of red enchilada sauce
Salt and pepper to taste
SOUR CREAM
1 cup sour cream
1 tbsp lime zest
Juice of a lime
1 tsp olive oil, salt and pepper

Step 1
Add the ground beef to a medium high pan breaking it up while it cooks. Add the onions, peppers and garlic and continue to cook for about 5 minutes.

Step 2
Mix in the tomato paste and all the seasonings. Mix it all well into the meat and vegetables. Add the cacao powder and the red enchiladas sauce and simmer for 5-10 minutes to thicken.

Step 3
Pan fry the hot dogs for about 3-4 minutes just until they have some browning on them. Add some water to the pan and cover it to steam the dogs all the way through.

Step 4
Lay down the tortilla and place a slice of cheese on top. Add the hot dog and roll it up.

Step 5
Add some of the chili to a long casserole dish and sprinkle on some of the cheese. Place the rolled hot dogs on top of the chili. Add some more chili and more cheese on top of the hot dogs and bake in a 400 degrees F oven for about 15 minutes or until the cheese is fully melted.

Step 6
Combine all the ingredients for the sour cream (transfer to a squeeze bottle for easy application. When the enchiladas are done, add sour cream and chopped green onions and cilantro.
