A very popular dish with Thais and I bet it will become a favourite for you too. Judging by my own experience :-). I never knew what tender fresh squid was until I discovered it in Thailand.

Chicken – Gai (guy)
Pork minced – Moo Sap
Pork sliced – Moo Chin
Crispy pork belly – Moo Grop (moo gop)
Shrimp – Gung (goong)
Squid – Bpla Muek (pla mook – like ‘hook/book’)
Seafood – Thale’ (tal ay)
Crispy yellow noodle – Mi Grop (mee gop)
On rice – Rad Khao (rad cow)
Less spicy – Phet Noi (pet noy)
Less sweet – Wan Noi

I eat regularly at local restaurants and these dishes can be ordered _almost anywhere_. The food is great, the prices are great, and they treat me like one of the neighbours. In my favourite she customizes my food by leaving out the sugar that is core to most Thai dishes – yes even savory dishes.
