Wouldnāt say youāre gonna find something like this in Mexico City, but Iād still eat it. Iām not an authenticity purist. Real Mexican food is made up of blends and appropriations of other things, that Mexico put its own twist on. None of it wouldāve happened if everyone was worried about āauthenticityā. At one point, tacos al pastor werenāt āauthenticā.
Iāve never had Huevos rancheros with avocado before ( I live in Texas) but thatās something I gotta try ASAP.
