Fried Potatoes with Onions & Peppers Recipe ~ The Secret to Browning
Potatoes
INGREDIENTS:
3-4 peeled and diced russet or yukon gold potatoes
1 cup diced onions
1 cup diced green bell peppers
1/4 tsp. salt
sprinkle of black pepper
sprinkle of garlic powder
sprinkle of paprika
vegetable oil
Soak potatoes for 2-3 hours or overnight is better.
Rinse and dry potatoes.
In skillet on medium high heat (8) add oil and dried potatoes.
Spread out potatoes and let cook for 3-4 minutes.
Stir and let cook another 1-2 minutes.
Add onions. Cook and stir for 2 minutes
Add bell peppers. Cook and stir for 2 minutes
Add seasonings. Cook and stir for 1 minute.
Serve.

We call them potatoes o'brien in the northland. Red and Green Bell's are best to me. The reds at great color and flavor.

I made this with jalapenos instead of bell pepper. (and yeah, i left the seeds in!) :D…..ALSO, i had a tomato, so i diced it up and added it too. the tomato basically disintegrated, and the potatoes absorbed all the tomatoey juice that formed. CAME OUT AMAZING!!!
In India this is called Potato Fry. The only difference is that we use extra Indian spices and curry leaves with no onions and peppers. But I am definitely gonna try this recipe too. It's really mouth watering π€€π

I just finished making and eating this dish. I should have followed the instructions a little closer. I waited a little too long to throw the onions and peppers in and ended up having to cook the potatoes too long. My wife enjoyed it! That's what counts. Happy wife….

Well…your recipe made it look fairly easy and short cooking time. When I made this it took a lot longer for the potatoes to get tender. Hot work. They tasted good BUT I'll go back to my mother's way….much quicker. She pre boiled her potatoes the day before. The next night she sauteed onions and peppers half way then added in the cut up cold boiled taters. Soooo much less time spent getting sweaty waiting for it to be done. Thanks anyway. π
Use red potatoes.Bake them, then put them in the fridge over night. Leave the skin on! Chop them and fry in peanut oil on high heat and stir for a couple min. Then put the chopped bell peppers and onions in and stir. Lower heat.
Use lots of paprika and black pepper. A little salt too.

I have been living a long time, and I know the difference between potatoes onions and peppers and, peppers onions with some potatoes
Watching you use that metal spatula in that cast iron skillet knows that, those people that eat those potatoes, are going to have a high iron and nutrient content and have a ferrius amount of material and everybody. If you ain't got sense enough to know you supposed to use a wooden spatula in cast iron skillet then you ain't got nothing going on but trying to make money off of videos because you don't understand the culinary part of cooking. You got the ingredients down but you don't understand the equipment
