Very Garlicky Chili Oil – (Surely will Compliment any Meal)

Delicious and Very Garlicky Chili Oil; this recipe is a perfect appetite enhancer. The intoxicating aroma every time you open the bottle is sure to make your appetite go wild. Ingredients:.
320 g. – Dried red chili
15 heads – Garlic
1/2 cup – Peanuts
2.25 l. – Canola oil
3 pcs. – Cinnamon stick
8 pcs. – Star anise
1 tbsp. – Coriander seed
8 pcs. – Black cardamom
1 tbsp. – Szechuan peppercorn
4 pcs. – Bay leaves
1/2 tbsp. – Sea salt
2 tbsp. – Vinegar

Recipe:

Prepare first the aromatics by cooking the cinnamon, star anise, cardamom, Szechuan peppercorn, coriander seed, and bay leaves on 1 cup of oil at low fire. Cook it for 10~15 minutes, then set aside. Let the spices infused to the warm oil.
Chop the dried chili by using a food processor, then add salt on the chili flakes. Put the chili flakes on the side, then start mincing the garlic using the food processor. Do not over mince the garlic. Once the garlic is minced, cook it on 2 liters of canola oil at medium heat until golden brown. Add vinegar in the mid of the cooking of garlic. Vinegar prevents the oil from going rancid. When the garlic turns to golden brown put the fire to low settings then add the chili flakes. Cook for another 10 minutes and then the chili oil is ready. Let it cool down to touch before starting to jar the chili oil.
