Easy Stuffed Pepper Recipe
Serves 6-12
Ingredients:
6 bell peppers
3 large tomatoes
1/2 red onion diced
1 1/2 tsp minced garlic
2 tbsp veggie broth
1 1/2 cup lentils (cooked)
1 cup quinoa (cooked)
3/4 whole wheat bread crumbs
1 tbsp miso
3 tbsp oregano
Pinch of black pepper
Directions:
Preheat Oven to 350 degrees
Place cut raw peppers in boiling water for 4 minutes, set aside
Scope out the insides of 3 large tomatoes and place in a large mixing bowl. Stir in lentils, quinoa, bread crumbs, miso, oregano, and black pepper.
Sauté onions, minced garlic, and veggie broth until onions are translucent. Add to stuffing mixture.
Stuff peppers with mixture and cook for 20-25 minutes until peppers are soft.
Enjoy!

I am thinking of bringing this to a Christmas party…(green and red peppers) ….i am in charge of the vegan option. Do you think I can make this in advance and cook it when I get there? Also would a tahini ‘gravy’ go good with this? Looks really good;)

Just made these tonight. I used 2 cans of diced tomatoes with basil and oregano instead of whole tomatoes. I only used 3 large peppers and packed them high with the filling. I also baked them 10 min longer due to over filling them. Next time I will use 6 peppers for 25 min. They were sooooo delicious. I ate 3 halves and didn't feel guilty doing so. I will definitely be putting these into my rotation of meals. THANK YOU VERY MUCH FOR THE RECIPE.

I love stuffed peppers. If you are feeling particularly lazy – like me – instead of stuffing the peppers, you can just dice them and put them into the stuffing and make it a casserole. I admit, it lacks the wow factor for presentation, but it works. =^..^=
I'm trying to stay away from processed grains, are the bread crumbs necessary?

I haven't tried this particular recipe but one that is similar. My husband didn't like it. It's just not the same w/o meat so when I make it on occasion I use ground beef. We are only 80/20 so we do cheat.
What else could you use instead of miso paste?

Mmmmm! Comfort food! Easy to make. I swapped out the colored peppers for green peppers and the mix included quinoa, frozen chopped kale and black beans and used canned salt-free tomatoes instead of fresh tomatoes. Omitted the WW bread crumbs. Poured most of the juice from the tomatoes in the casserole dish so the peppers would cook in the juice. 😋😋
Made the stuff peppers.
The recipe looks delicious. I would put a little bit of tomato sauce or strained tomatoes on top before baking.
