Italian Food Recipes: Pork Chops and Vinegar Peppers with Chef G.S. Argenti

What is tender juice, sweet, sour, and hot all at the same time? Well, you guessed it, Pork Chops with Vinegar Peppers. This is a classic American-Italian dish invented most probably by Italian immigrants on the east coast. It contains the best of America (copious amounts of meat) and the best of Italy (vegetables). There are a few secrets to cooking pork so it’s tender and juice though. First, you have to brine the meat for at least an hour and then you have to cook on high heat to form a crust and then finish the cooking process on a simmer. The same is true for the sauce, it’s not difficult to make but a little technique goes a long way. Join Chef G.S. Argenti as he guides you through making this iconic and delicious dish.
