Mexican food you can call it, enchiladas, carnitas, mole poblano, cochinita pibil, etc. Not something that is only known in 1 state in 3.

Personally, I like to be able to bite all the way through my tamale, not have to pick through it. That is my personal preference.

I mean, I thought the point was to have an easy portable meal to eat in bites without having to pick it apart in it’s origin. You don’t throw chicken bones onto the mass for chicken tamales.

I can steam the mussels -> save the broth for the masa -> remove the mussels off its shell then incorporate it. Why do it this way I wonder. What do I know Iโm just a cook. Iโve seen this tamales on Eater though.

Everyone in this tread is stupid as fuck and a bunch of uncultured swines. I just see a bunch of white people complaining about a food they will never been able to eat or even been serve at your local shitty food joint in the USA.
Those are called “tamales de tichinda” and is an African-Mexican dish from the Costa Chica between Guerrero and Oaxaca. I now that is not the best looking dish in the world, but is really delicious.
