How many years does an iguana have to be good to eat?

My boyfriend says this iguana is good eating but I said it’s too old.
What age iguana is best to eat? A younger one than this one? Or is the one the best?

Thank you!

I mean, I do know that people eat iguanas in some parts of Mexico, but I honestly can’t tell if your post is an honest question or you’re trying to be funny or borderline-racist.

Go to Michoacan and find out. Please post results

I personally don’t like iguanas because they catch them very young and the way they catch them, it doesn’t have any meat, it’s as if you were eating chicks, I imagine that an adult one will be more meaty and will taste better

  4. There’s an Iguana taco recipe in Diana Kennedys Oaxaca cookbook if OP is genuinely interested.

I’m thinking it might taste like alligator, which is readily available in Florida and Louisiana. It tasted like dry chicken, not bad, but not great. Probably some slow cooking in a delicious sauce would make for a decent taco.

There are people farming them for an alternative protein source.

Legit question, I don t know the answer.
