That’s a “Gordita” a fat tortilla filled with meat
It’s lembas bread or “journey bread”. Google it. The settlers & cowboys used it to survive.
It’s a “gordita de horno”. These are popular in Zacatecas/Durango pueblos (small villages and ranches) and are made with corn flour, milk, brown sugar, cinnamon cooked in stone and clay oven.
