Maizena. Just make sure it’s not the flavored version which is used to make atole.
Corn starch.
It looks like you’re looking for Maseca, no?
Maseca (nixtamalized white corn flour) is used to make tortillas. Maizena (corn starch) is used to make tamales/atole, and can be added to wheat flour to make fried foods crispier. The one in the picture looks like maizena.
Cornstarch is fecula de maiz
Yeah British people really screwed themselves over with calling corn starch corn flour, it’s not even ground up corn like a normal flour would be, Maizena and Maseca are brands btw
Maizena = Fecula de Maíz
Maseca = Harina de Maiz Nixtamalizada(no one calls it this)
Maseca, right?
Harina de Maíz. There’s different brands. Maseca is the most used one.
Fécula de Maíz. Maizena is a brand; I usually buy Pronto. I mainly use it to make the most awesome chippy fish to comfort homesick Brit expats down here. They can hardly believe it came from a Yank kitchen!
When British what is cornflour is, They meant is cornstarch. Most European countries will follow how the British call their ingredients. If you were to fry something and want it crispy after deep frying it. I would use cornstarch to have a thin breading on it with a dip of beaten eggs, then cornstarch again. You would have to deep fry on hot oil to achieve the crispiness of the breading.
I am not sure if potato starch is available in Spain or any European countries. But this is also a great alternative to crispy breading.
I see you are doing a beer battered fries. I also recommend doing either a cold ipa, pale ale or seltzer mixing with your batter, and add some powdered seasonings to have flavorful fries.
If you are doing some tamales, you use Maizena (a brand where you make atole. corn tmasa . Check on r/mexicanfood for any advice and suggestions how to prepare it. You can either use corn husks (traditional way to steam tamales), or use aluminum foil, or parchment paper to steam it. You can put whatever braised meat filling, apple pie filling, strawberry filling or whatever filling you like.
Fecula de maíz
I’m confused. Are you saying you used corn tortilla flour to make fries or you used corn starch? both??
Para hacer papas fritas puedes usar fécula de maíz o fécula de papa. Las 2 hacen la misma función al freír.
Para espesar caldos, sopas, etc. Solo puedes usar fécula de maíz, disuelta previamente en agua…
