Can’t wait to go to Oaxaca next year-my parents went and fell in love with the place and it’s awesome food. Will be taking a cooking course as well so hopefully I can try my hand with new recipes.

What are you talking about? They look great. Like, this is exactly how chilaquiles normally look here in Mexico. They are only missing a little bit of cream and some refried beans imo, but those things are optional. 😉
