Another British attempt at Mexican cuisine. Chicken flautas topped with a spicy cabbage salad (red and white cabbage, onion, tomato, green chilli, habanero, cilantro/coriander and lime juice). Had to switch crema and queso fresco for creme fraiche and feta, due to availability. Did I do ok?

    You did quite well! In my region in Mexico there’s a lot of French influence, and crème fraiche is the type of crema we use. With feta, the flavor doesn’t quite add to the flavor or texture of queso fresco. May I suggest looking up recipes to make queso fresco at home online? I’m pretty sure all you need is either lime juice or vinegar and whole milk. It’s similar to making ricotta. Hope you enjoyed and keep on trying!

    Close enough. As a Mexican I’m curious as to taste what came out off of that recipe. Flautas are one of my favorite Mexican dishes.

    Some people think that if the dish lacks certain traditional ingredients, it means that the dish stops being Mexican, I think its flavour profile is what’s important about Mexican cuisine.

    Those look palatable to say the least. Cheers!

    I can see the crispiness just from the pictures. Looks great! Your cabbage topping also looks more complicated and spicy than what I usually get in restaurants, but I prefer what you came up with. Wish I could join you!

    Looks amazing. Btw, queso fresco is extremely easy to make.

    Bring whole milk to a slight boil. Kill the heat. While stirring, add white vinegar until curds form. Strain and squeeze in a cheese cloth. That’s it. You now have queso fresca

    Looks good, the feta is the weird part ,mexican shredded cheese blend may have been more appropriate in my opinion, but hey im still proud that you made it look this good. Great job O.P. you made this chicano proud.

    excellent! besides, cabbage isn’t an unusual garnish, and creme fraiche is my favorite instead of crema.

    gotta try with feta myself, tho, but you did some amazing flautas!

    Looks good, OP. Though we don’t use cabbage, but lettuce. Also, swap the tomato, green chili, habanero and lime for the tomatillo sauce you can find at any Sainsbury’s, which is decent for a salsa verde.

    Sour cream is quite close to what we use.

    If you prefer salsa roja, I’m speculating here, you could try using Italian (Roma) tomatoes as they’re the same we use here. As far as I know, we use them less ripe than Italians, but the difference should be unnoticeable. I used to make salsa with finger chilies as they’re spicier and closer to Serrano chilies.

    BTW in México we use lemon, the reason it is green and you think it’s lime is because farmers harvest lemons when they are not mature yet (IK think it is related to the useful life of this fruit), so they still green but its final color is yellow
