Here’s a recipe for Chicken Manchurian with Egg Fried Rice:

Chicken Manchurian:

Ingredients:

For the Chicken pieces:

400g boneless chicken
1 egg white
1/2 tsp salt
1/2 tsp black pepper
1/4 cup corn flour
Oil for frying
For the Manchurian Sauce:

3 tbsp. oil
1 tbsp. garlic finely chopped
1 bell pepper (capsicum), diced
1 carrot thinly sliced
1 tbsp. soy sauce
1 cup tomato ketchup
1 tbsp. vinegar
1 tbsp. sugar
1 tsp salt
1 tsp black pepper
1/2 tsp red chili powder
1/2 cup chicken stock

Instructions:

In a bowl, mix the boneless chicken chunks, corn flour, egg white, salt, and pepper. Mix well to form a sticky mixture. Let it rest for 10 minutes.

Shallow fry them in hot oil until golden brown and cooked through. Drain on paper towels and set aside.

In a separate pan, heat oil. Add chopped garlic and sauté. Sauté for a minute until the raw smell disappears.

Add diced bell peppers and carrots and sauté for a couple of minutes until they are slightly cooked but still retain their crunch.

Mix in soy sauce, tomato ketchup, red chili sauce, vinegar, sugar, salt and pepper and chicken stock. Adjust the sauces according to your spice preference.

Add the fried chicken balls to the sauce and toss them gently until they are coated with the sauce.

Garnish with chopped spring onions and remove from heat. Your Chicken Manchurian is ready!

Egg Fried Rice:

Ingredients:

2 cups boiled and cooled rice (preferably leftover rice)
2 eggs, lightly beaten
1 cup mixed vegetables (carrots, peas, corn, etc.), finely chopped
1 onion, finely chopped
2-3 cloves of garlic, minced
1 tbsp. vinegar
Cooking oil
Salt and pepper to taste

Instructions:

Heat oil the pan and add in the beaten eggs and scramble the. Dish out in a plate.

In the same pan or wok heat the oil. Add minced garlic and sauté for a moment until fragrant.

Add chopped onions and sauté until they turn translucent.

Mix in the chopped vegetables and sauté for a few minutes until they are slightly cooked.

Add the cooked rice to the pan. Break up any lumps and mix well with the vegetables.

Pour vinegar over the rice and mix evenly, ensuring that the rice grains are coated with the sauce.

Season with salt and pepper to taste. Continue to sauté for a few more minutes until everything is heated through.

Serve the Chicken Manchurian and Egg Fried Rice together for a delicious and satisfying meal. Enjoy!
