    My meat market uses brisket and slices it like this then seasons it.

    Cheaper and more tender than skirt steak.

    It looks like hanging tender. We often see these called Fajitas Nortenas in South Texas meat markets.

    Def a hanger steak but it looks there may have been multiple incisions to butterfly it? Maybe to make it even thinner.

    “Rib flap” or as others have said “Flap steak” in California.

    I’m sure this is carne enchilada, which is usually made of pork. Probably a part of the leg.
