    I grew up in SoCal and recently moved somewhere where there aren’t a lot of options when it comes to Mexican food, especially the street tacos I really enjoyed eating in LA. So I decided I needed to make my own.

    The tortillas a handmade. For the meat I used pork shoulder marinated in Chipotle Adobo sauce (store bought) and a bit of pineapple juice in an attempt to somewhat replicate pastor flavor. Onions, cilantro, and Herdez salsa verde to top it off. I also roasted some pineapple chunks in with the meat when cooking.

    Critiques and suggestions on how I can improve would be very welcome.

  2. The double tortilla is usually because in taquerias and street tacos they have cheap-ish thin tortillas, so you need double in case it gets soggy and breaks.

    Homemade tortillas, or from tortillerias, etc are thick enough and you don’t need the double tortilla. So, yeah, you are probably eating less tacos 😉 because you’re eating lots of dough

    For the tortillas next time try hydrating your dough a bit more. When you press them, the edges should be smooth. Also maybe try them a little thinner.
